s's Muffins (Banana oat)
S, R's Mom, bakes these all the time. They're almost always in her freezer and they were regularly in R's. They're simple, moist and easy to throw together in the time it takes your oven to pre-heat... They're also super easy to freeze.
Before R headed off to Inuvik he asked her for the recipe so that he could take some with him to the far north... after I made them of course.
S suggests wrapping them first in waxed paper and then in tinfoil- both of which are recyclable. Also, when bananas are really ripe, mash and freeze in 1 cup increments...makes baking these muffins even faster!!

- measuring cups

- rubber spatula
- whisk
- muffin tin- greased or lined
Ingredients
- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- ½ cup granulated sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 2 eggs, beaten
- ¼ cup cooking oil
- ¼ cup milk
- 1 cup (3 medium) mashed bananas
- ½ cup chocolate chips (or chunks if you're like me and haven't gotten around to buying them yet)
- Pre heat oven at 400°F
- Blend flour, oats, sugar, baking powder, baking soda and salt together in the larger of the two bowls. Set aside.
- Blend together the eggs, oil, milk and bananas.
- Add the chocolate chips and the liquid mixture to the bowl containing the dry mixture.
- Gently fold together the layers, just until moist. Lumps are GOOD, don't over mix!
- Spoon the mixture into your prepared muffin tins. Technically this should make 12 muffins, I got 14.
- Bake for 18-25 minutes, until a toothpick comes out clean.
